Day 7: Gnocchi with creamy pancetta and spring onion sauce
As we had some Gnocchi left over from last night and didn’t want to waste it, for lunch today I made a sauce from stuff in the fridge that needed to be used up.
Ingredients:
1 Tbsp Olive Oil
100g Pancetta, roughly chopped
2 small spring onions
3 cloves of garlic, crushed or finely chopped
12 pcs of Gnocchi
Ground Black Pepper (to garnish)
Grated Parmesan (to garnish)
Method:
Pour the oil into a non-stick frying pan and use low / medium heat. Stir the garlic until you can smell it then add the Pancetta. Stir for about 5 minutes then add the spring onions. Stir for another minute or so. Stir in the cream and heat until it has thickened a bit.
Meanwhile, boil some water in a small saucepan. Add the Gnocchi and cook until they float. When they float, cook for a further 10 seconds then remove and drain well.
Mix everything together and serve. Garnish with black pepper and parmesan to taste.
