Day 9: Spicy chicken Quesadillas
This is quite easy to make and is a taste sensation! These bad boys will be cooked again and again!
The main ingredients
- 1 Chicken breast fillet, cut into thin strips
- 2 Spring onions, diced
- 2 Garlic cloves, crushed
- Oil
- A few Jalapeño peppers
- Multigrain flour tortillas
- Cheese (Colby or any mild easy-melt cheese), grated
- 1 Avocado and sour cream to serve
Ingredients for the spice mix
- ½ tbsp Flour
- 1 tsp Chilli Powder
- 1 tsp Sweet Paprika
- 1 tsp Salt
- 1 tsp Cumin
- 1 tsp Cayenne Pepper
- 1 tsp Oregano
Mix all the spices and flour in a bowl and mix thoroughly.
Pour a little oil into a frying pan and add the chicken. Stir in the spices ensuring all the chicken is covered. Cook on a medium heat until cooked, adding a little more oil if needed.
Meanwhile, add a little oil to a frying pan and add the garlic, spring onions and Jalapeños. Fry until the spring onions have softened.
Place a tortilla flat onto a plate. On one half of the tortilla only add the chicken, then the veggies, then top with the cheese.
Fold the tortilla in half.
Heat a little oil in a frying pan and add the Quesadillas to the pan. Cook on each side for a few minutes until the tortillas begin to crisp and colour slightly. You can flip these over a couple of times if needed.
Remove from the pan, serve with sliced avocado and sour cream.
