Day 10: Jambalaya – with chorizo and prawns
Ever since I made Gumbo (which was gorgeous) I’ve wanted to try to make Jambalaya as well. It turns out that Jambalaya is a lot simpler and faster to make than Gumbo and it is quite healthy too! I will definitely make this again, it was lovely.
Ingredients
- 2 tbs olive oil
- 250g chorizo sausage, sliced
- 4 garlic cloves, crushed
- 1 onion, chopped
- 1 red capsicum, seeds removed, diced
- 1 green capsicum, seeds removed, diced
- 4 tbs sweet smoked paprika
- 200g long-grain rice
- 2 bay leaves
- 400ml tomato chopped tomatoes
- 375ml chicken stock
- 1 tsp cayenne pepper
- 1 tsp cajun spice
- 1 tbs oregano
- 500g raw (local) prawns, peeled, de-veined, tails intact
- 6 spring onions (using all parts), sliced
Add oil to a pan and cook the chorizo, then remove them (put it in a pot) but save the oil left.
Chuck the peppers and onion for a little while (a minute), then add the spring onions and after a little while more, (about two minutes) add the garlic and paprika.
Add everything else except the prawns and simmer for 20 minutes or until the rice feels almost done. I had to add a bit extra time because it wasn’t stirred enough it started to burn and had to be transfered into another pot.
Finally add the prawns and simmer for a further 5 minutes (or until cooked).
Add it to a bowl and serve.
It was gorgeous!
