Day 11: Creamy Chicken, Mushrooms with Rice


This recipe is quick and easy and tasty.  It took about 30 mins including prep time.

What you’ll need:

  • 250g Chicken breast, sliced
  • 1L Chicken stock
  • 1 cup long grain rice
  • 1 tbs oil
  • 200g mushrooms, sliced
  • 1 onion, sliced
  • 1tbs Cornflour
  • 200g Green beans, sliced
  • 100g Light Sour Cream
  • Salt & Ground black pepper to taste



Put 2.5 cups of the stock in a small saucepan and bring to the boil.  Add the rice and cover.  Leave for 12 mins.

Meanwhile, heat the oil in a large frying pan.  Add the chicken and lightly fry until brown.  Transfer the chicken to a bowl.


Add the mushrooms and onions to the frying pan and add 1/2 a cup of the remaining stock.  Cook, stirring, for 5 mins or so until the stock has reduced and the mushrooms and onion are soft.

Whisk together the remaining stock and cornflour in a bowl. Add to the pan along with the chicken and beans and stir.    Bring to the boil and stir until the sauce thickens a bit.  Stir in the cream.


Serve with the rice.
