Day 14 – Low Carb Pizza bases

I’ve been looking for a while for a good low carb pizza base replacement, with no real luck so far. I’ve tried a thin omelette, which is a bit eggy and too floppy, and oopsie bread which has the right flavour but is crumbly and burns around the edges when cooking the toppings.

This recipe from Your Lighter Side uses eggs, coconut flour and cream cheese and makes two individually sized pizza bases. I topped the bases with a fairly standard assortment of pizza toppings – tomatoes, red onion, jalapeños, olives, champignons and cheese.

The texture of the base was pretty good, and it held together, allowing you to pick up each slice, but the parmesan was a bit heavy – the taste of the base overwhelmed the toppings –  and a slightly denser base would be better. I’l repeat this recipe later in the challenge, replacing half the parmesan with almond meal and see if I get a better result.
