Day 17: Pesto


Pesto is another thing I’ve been wanting to try to make myself but never gotten around to.  As it happend we randomly had fresh basil for a dish we couldn’t remember what we bought it for.  So I decided to give it a go.I ended up freezing it as we had a lot of lasagne leftover still to eat.

It tasted lovely though and I look forward to trying it in a dish.


  • 60g Basil leaves
  • 40g Pine nuts
  • 30g Parmigiano Reggiano cheese
  • 1 Garlic clove
  • Light olive oil


Chuck it all into a pot to be blended except the oil.  Once it’s smooth, slowly add oil until it looks right.
