Day 23 – Cheesy One Pot Wonder

Day 23’s dinner was a “what’s in the bottom of the fridge” special. I didn’t make notes of the exact quantities I used, so this is all a bit rough, but the finished dish was incredibly tasty, so it’s worth a crack.

Start with one onion (sliced or chopped, it’s your call) and a couple of cloves of garlic (minced), fry in a couple of Tbs olive oil (I used a basil infused oil, since it was the only oil left in the house) until golden. Add A head of broccoli (chop off the florets and cut the stem into strips), a few cherry tomatoes (quartered) and a handful of olives. Add salt, pepper, and cayenne to taste. Saute until the broccoli becomes bright green.

Now add about 1/3 of a cup of the stock of your choice and a few Tbs tomato paste or passata and cook over a medium heat until it is almost completely absorbed/reduced. Add about 100mls cream, and stir through. 

Finish by adding a handful of grated cheddar, a few Tbs freshly grated parmesan and 1Tbs chopped parsley. Stir through until the cheese begins to melt, serve and listen to your arteries protesting!
