Day 25 – Chocolate Chia Brownies

More desserts! I’ve been looking for a low carb brownie recipe for a while now – this one uses chia gel and cream cheese to keep the centre moist and almond and flax meals to keep the carb content down. As a plus, all three are high in protein and fibre and chia is a great source of omega 3.

I found that the brownies cooked faster than the recipe suggested, and that the surface actually looked a little burnt – don’t let this fool you, the inside was moist and cakelike. Not quite the texture you’d expect from a brownie, but still, it’s CAKE! Low carb CHOCOLATE CAKE! Dave had some a day later with cream and fresh raspberries and enjoyed the addition.
