BBQ: Steak with a fig, feta, bell pepper, spinach and hazelnut salad with a honey, lemon and garlic dressing.
Summer and BBQs are much enhanced by an awesome salad. I’ve heard a lot of good things about figs so I thought I’d give it a go to make a salad made with it.
- Steak – well make it however you like it but mine is always rare
Ingredients for the salad (serves 4)
- 1 table-spoon extra-virgin olive oil
- 2 table-spoon lemon juice
- 2 crushed garlic cloves
- 1 table-spoon honey
- 1/4 tea-spoon ground black pepper
- 50g Spinach
- 1 red bell pepper cut into strips
- 1/2 thinly sliced yellow onion
To dress the salad:
- 1 cube soft feta cheese per plate
- 1 table-spoon of nuts (walnut, hazelnut or pecan) I had hazelnuts so that’s what I used
- 4 fresh figs, quartered lengthwise
These could be mixed into the main salad but it wouldn’t look as pretty 🙂
Ingredients for the dressing
- 2 table-spoon lemon juice
- 2 crushed garlic cloves
- 1 table-spoon honey
- 1 tea-spoon dijon mustard
- 1/4 tea-spoon ground black pepper
Mix it all up. You might need to put it in the microwave for about 15 seconds just to make the honey mix with the rest.
It was an absolutely gorgeous salad. The ingredients went perfectly together.
