Creamy cashew nut & mushroom mix – with halloumi.
I adore this dish, it’s tasty and quick to make and doesn’t add up to much in calories.
Ingredients
- 1tbsp butter
- 1 onion chopped finely
- 1-3 garlic cloves crushed
- 250g of mushrooms
- 40g cashew-nuts
- 1/2 tsp paprika
- 1/2 tsp chill powder
- 1-2tsp thyme, dried
- 1 veg. stock cube
- 270mg coconut milk
- 1/2 lemon juice
- Added suggestion; halloumi cheese
Add butter and onion for at least 5-10min on low heat.
Then add everything most of everything else; coconut milk and lemon juice, stock ands all of the spices, garlic for a few 5 minutes or until the mushroom are soft.
Finally add the cashew nuts and and mushrooms.

Plain total per portion: 518 calories without the halloumi.
