Best salad dressing ever!
I am really pleased with this. It looked so simple but it was just fabulous if I may say so myself. This salad dressing was so good that it even convinced my salad dressing hating husband. I mean it, he venomously hates every salad dressing he has encountered but this one he loved.
The salad itself can contain whatever you like. I added:
- Veg: grated carrot, chopped spring onion, sweet corn, chopped bell peppers (capsicums) and artichoke hearts and sprinkled with coriander.
- Protein: hot-smoked salmon and egg.
Depending in which calculator looked it it is or isn’t under 500 calories. Without the protein it would deffo have been below 500 calories no mater what and you could have had a lot more veg.
♥ Now for the magic dressing ♥
- 4tbs olive oil
- 2 garlic cloves (crushed)
- Juice of 1 lemon – also all zest
- Juice of 1 lime
- 1 tsp honey
- 2-3 tsp turmeric (might try 3 next time)
- 1/2 avocado
- A pinch of salt
Mix all of it up and pour over salad. This made 2 portions for us.
I tried 2 different recipe calculators and one had it at 133 and the other at 380 calories per portion.
I’ve made this many times since posting this and I reduced the protein by cutting out the eggs and it’s still very very filling.
