Extra garlicky chilli and wine prawns

I simply couldn’t find a recipe that was garlicky enough. Why are people so scared of garlic? What kind of monster adds only 2 cloves to garlic prawns? Even 4 is practically a crime.

So I made up my own version. Not the dish if you have an important meeting the day after!

This is 1/2 the dish

As a starter: enough for 4-6 people

Ingredients

  • 500g uncooked prawns
  • 1 large garlic bulb/head crushed
  • 4 birds eye chillies roughly sliced
  • 1/2 cup white wine
  • 1tbs lemon juice
  • Vegetable oil
  • 3tbs butter
  • 3-4tsp sweet paprika
  • Salt – plenty of!
  • 1+ tsp MSG
  • Black pepper, a couple of twists of the grinder
  • To serve: crusty bread and avocado

Coat the pan and the sides in the oil.

Add the chilli, garlic with 1-2tsp salt and cook on low heat until it started to get brown (6mins or so). This is the most important part, if you don’t cook it long enough it will taste harsh.

Add the butter towards the end and melt it.

Next add the spices and stir in and cook a bit longer (3 mins or so).

Turn up the heat as you mix in lemon juice and wine. Taste the mix and add more salt / MSG / Paprika to taste.

Last comes the prawns. Turn down the heat – they don’t need long to cook. Once they are pink, they are done.

Enjoy with fresh crusty bread and sliced Avocado. Yum.
