Halloumi, Avocado, pomegranate and Lemon Salad

It’s been a hot weekend and I fancied something a bit lighter and I remembered that I had bought Halloumi from the farmers market.  I googled some recipes and made my own version of it.  This was absolutely sensational if I may say so myself.

Ingredients 

  • Halloumi to fry

For the rest of the plate:

  • Salad leaves you like
  • Pomegranate seeds
  • 1 avacado

 

Dressing:

  • 1tbs caramelised balsamic vinegar
  • 2tbs olive oil
  • 1 garlic clove (minced)
  • 1/2 a lemon’s juice
