Peruvian chicken with jalapeño garlic sauce

With no option to eat out I find myself cooking more at home and trying new dishes.  Peruvian chicken with jalapeño garlic sauce is the latest.

CHICKEN:
1kg chicken thighs
5 cloves garlic peeled
1/3 cup soy sauce
2 Tablespoons lime juice
1 Tablespoon extra virgin olive oil
2 tsp cumin
2 tsp paprika
1/2 tsp dried oregano
Black pepper

Mix all in a blender and pour over the chicken. Leave the marinade as long as possible  30min to 24hrs.

GREEN SAUCE:
4 jalapeños seeded, ribs removed and roughly chopped
1 batch fresh cilantro leaves
2 cloves garlic peeled
1/2 cup mayonnaise
1/4 cup Greek yogurt
1 tbs lime juice
1/2 tsp salt
1/4 tsp black pepper
2 tbs extra virgin olive oil

Mix all up in a blender.

Leave the chicken for as long as you can manage (1hr to 24hrs) the longer the stronger the flavour. I left mine for 10hrs.

Cooked on the Weber BBQ

Homemade flatbread too – freshly grilled.

Absolutely delicious
