Old fav: Healthy(ish) chicken fajitas
I love fajitas and with my latest health obsession I’ve spent a lot of effort on making it as healthy as possible without losing taste. I was surprised at that 1 wrap added 16% more sodium per dish but it wouldn’t be the same without for obvious reasons. I’m not sure if I’ve calculated something wrong but it seem to be a lot of calories for one wrap and if not miss calculated somehow – how can I make it healthier? Any ideas anyone?
I normally would have more cheese with this – you can see the calorie difference below.
Spice mix for the dish
- 1tbs flour
- 2tsp chilli powder
- 3tsp paprika
- 1 tsp salt
- 1 1/2 tsp cumin
- 1 1/2 tsp cayenne pepper (tsp)
- 2 tsp dried oregano
Mix all the spices and flour into a bowl. This is a gorgeous mix – no need for premixed rubbish!
Ingredients for the pan
- 630g Chicken Breast
- 3 red peppers
- 1 onion
- 4 garlic cloves crushed
- coriander leaves
- 1 tbs Vegetable oil
Method:
- Heat the oil in a large frying pan or wok, add the garlic.
- Add the chicken and thoroughly stir in about 3/4 of the spice mix, cook until the chicken is sealed.
- Add the onions and peppers and stir in the remaining spice mix.
- Cook until the veggies have softened a little. Remove from heat.
- Stir in the coriander.
- Serve whilst piping hot.
Items for the table
- 400g refried beans
- 6 Tortilla Wrap, Wholegrain
- 150ml Natural yoghurt (I honestly think most people can’t tell the difference between it and sour cream)
- 1 avocado
- 25g cheese per portion (optional)
Heat up the refried beans, mash the avocado up with a fork and put everything else out ready to eat.
